Suitable Cooking Methods: Traditional Roasting

Bring to Room Temperature

Remove roast from packaging and pat dry with kitchen paper. Allow 30-60 minutes to bring to room temperature.

Cooking temperatures and times
1. Preheat conventional oven to 250°C/475°F/Gas 9
2. Sear meat for 15 minutes in oven
3. Reduce oven temperature and add cooking time below

Rare: 190°C/375°F/Gas 5 for 10-12 minutes per 450g (1lb). Internal temperature of meat: 45 - 47°C/113 - 117°F
Medium: 190°C/375°F/Gas 5 for 14-16 minutes per 450g (1lb). Internal temperature of meat: 55 - 60°C/131 - 140°F
Well Done: 190°C/375°F/Gas 5 for 20-22 minutes per 450g (1lb). Internal temperature of meat: 65 - 70°C/149 - 158°F

Resting:
Leave in a warm place to rest for at least 20 minutes.

Matured for minimum 14 days

Suitable for home-freezing

If frozen: - Store at <-18ºC 
Recommended Shelf Life for opened pack : Shelf life 6 days
Frozen: Once defrosted store between 0 - 5ºC - Use within 24 hours

Thawing
Leave in wrapping and thaw out slowly in a refrigerator. Ensure product is thoroughly defrosted before cooking.
NOTE: Allow up to 36 Hours to Defrost
